However it is not "our” royal jelly. We do have bee hives but barely enough for our own needs (85 brothers). Alpine Brown breed cows. The milk from the evening milking is left to rest for at least 12 hours in large vats at a temperature of 10 to 12 °C, during which a layer of cream forms and floats on top of the milk. After the twelve hours have passed, the cream is removed by hand using a tool called a “spannarola” (cream skimming). It is then placed into the churn (a wooden vessel with a cylindrical or truncated-conical shape) and churned until butter forms. Once the churning process is completed, the butter is washed by hand with cold spring water and kneaded by hand to help the buttermilk drain out. The final step is placing the resulting mass into wooden molds (usually in sizes ranging from 0.5 kg to 1 kg), where the butter takes on the classic block shape, with dimensions that may vary.

Mucche di razza bruna alpina. Il latte della sera viene lasciato riposare per almeno 12 ore in ampie vasche dalla temperatura di 10 ai 12°C formando uno strato di panna che galleggia sopra il latte. Trascorse le dodici ore si toglie la panna a mano con un attrezzo chiamato “spannarola” (spannatura del latte). Successivamente viene messo nella zangola (un recipiente di legno di forma cilindrica o tronco-conica) e si sbatte fino a quando si forma il burro. Una volta concluso il processo di zangolatura viene poi lavato a mano con acqua fredda di sorgente e impastato a mano per aiutare la fuoriuscita del latticello. L'ultimo step è quello di inserire l'impasto ottenuto in stampi di legno (solitamente della pezzatura che va da 0.5 Kg a 1 Kg) dove il burro arriverà ad ottenere la classica forma di panetto dalle dimensioni variabili.
